Smallholder farmers in Colombia’s “Coffee Axis”, or Eje Cafetero, contribute coffee to this regional blend.  They grow Castillo coffee on their family farms.  In this region of Colombia which represents parts of the Departments of Caldas, Risaralda and Quindío coffee farmers get not one, but two harvests a year.  At each harvest coffee cherries are picked and processed in the washed method before being dried on tables under cover from the seasonal rains.  

The Mountain Water Process is a gentle, chemical-free method of decaffeination that preserves the coffee's unique flavors and characteristics. The process begins with pre-soaking the green coffee beans to expand them for caffeine extraction. The beans are then introduced to a solution of concentrated coffee solubles that gently draw out the caffeine while preserving the coffee's unique flavor compounds. Once caffeine removal is complete, the coffee is re-dried, re-bagged, and ready for its journey to your cup.  This coffee has notes of red fruit, caramel and chocolate, a creamy body and a sweet finish.
